Microbiological status of milk products procured from sweet shops of Faizabad district

ABSTRACT

A total of 40 samples of milk products comprising burfi, rosogolla, khoa and paneer (10 samples each) were collected from sweet shops of different areas of Faizabad district of Uttar Pradesh. The mean standard plate counts in burfi, rosogolla, khoa, and paneer were 2.2 x 106,7.0 x 107, 2.2 x 105 and 1.3 x 107 cfu/g, respectively, while mean coliform counts in the respective products were 1.2 x 105, 1.6 x 107, 4.2 x 104 and 1.1 x 102 cfu/g, respectively. Mean yeast and mold counts in burfi, rosogolla, khoa and paneer were 8.8, 5.6, 30.0 and 161.5 cfu/g, respectively. On microbiological analysis, 42 bacterial isolates comprising E. coli (12), Staphylococcus aureus (10), Bacillus cereus (10), Pseudomonas aeruginosa (4), Streptococcus faecalis(3), Micrococcus spp. (2) and Streptococcus pyogenes (1) were recovered from 40 samples of milk products. The results of present study revealed that majority of milk product samples exceeded the permissible limits of different microbial counts and showed the presence of many pathogenic organisms, which make the milk products unfit for human consumption.
