Preferential poultry meat consumption and cooking patterns in Bijapur district of Karnataka

ABSTRACT
A survey based study was carried out to ascertain the consumption and cooking patterns of chicken meat in Bijapur district of Karnataka (India). The sample size of 150 comprised of 120males and 30 female respondents with varied education and income levels. The study revealed that72% respondents liked to purchase broiler meat, while only 25.33% preferred meat of indigenous poultry breed (desi bird). During the study, 52% respondents consumed chicken meat twice in week while 44% consumed weekly. The study revealed that 52% respondents purchased 1-2 kg, while 38% purchased 0.5-1 kg of chicken meat. In the study area, 59.33% liked to cook and consume chicken curry, while 29.33% preferred chicken fry. The study depicted that 63.33%respondents liked whole chicken, while 24.67% showed their interest for breast meat. During the outbreak of diseases like bird flu, 52.66% respondents felt no hesitation in meat consumption. In the study area, 72% respondents enhanced their consumption in winter season, while 20% in rainy season. When enquired, 62.66% respondents consumed meat normally in summer season. In case of increased prices, only 28% had positive response and 47.34% showed negative response to this aspect. The study revealed that 49.33% respondents preferred first to eat chicken meat, while 30% expressed choice for mutton. It can be concluded that respondents preferred broiler meat as curry or fry, twice a week alike over beef, mutton and fish with no considerable effect of disease outbreak and summer season, though, increased prices affected the consumption of meat.Keywords: Chicken meat, consumption pattern, cooking pattern
