ABSTRACT
In the present study, a comparative protein profile for cattle BE and native antigens in SDS-PAGE is described. Cattle adrenal BE antigen preparations revealed at least 6 different proteins as observed from SDS-PAGE. Four of these 6 different proteins with molecular weights of 68/69, 45/46, 36/37/38 and 26/29 kDa were found to be common to muscle BE preparation as well as to the extracts of raw adrenal and muscles of cattle. The fraction 36 kDa molecular weight formed one of the major bands in unheated muscle and BE from adrenals and muscles. The results of these studies indicate that there are at least few common antigens between both native and heated preparations of cattle muscles and adrenals, that might prove useful in speciation of heated cattle meat.Keywords: Adrenal, BE-antigens, muscle, native antigens, SDS-PAGE
