Studies on Physico-chemical Characteristics of Milk Samples Collected from Nagpur City

ABSTRACT

A total of 100 milk samples, 10 each from 10 different agencies, were collected from the local market. These samples were compared with known unadulterated 10 cow milk samples collected from cattle breeding farm, Nagpur Veterinary College, Nagpur as control samples. All the samples were subjected for determination of specific gravity, fat (%), total solids (%), solid not fat (%) and acidity (%). They were also tested for the presence of adulterants, viz., sugar, starch, sodium bicarbonate and urea. The average fat per cent ranged between 1.88 ± 0.05 to 5.87 ± 0.10 per cent. The figures for total solids, solid not fat and acidity were 8.33 ± 0.13 to 14.58 ± 0.13, 6.41 ± 0.10 to 8.76 ± 0.19 and 0.06 ± 0.004 to 0.15 ± 0.01 per cent, respectively. The specific gravity ranged between 1.023 ± 0.00 to 1.031 ± 0.00. Considering milk quality characters, the milk samples from two sources were found substandard. The variation in milk quality traits compared with college farm sample indicated adulteration by one or other adulterants. Milk samples from three sources were found to have been adulterated with sodium bicarbonate and urea, and five samples were found to be adulterated with sugar by varying degree. Analysis of variance revealed significance at 1% level.
