Bacteriological Studies of Fresh Market Pork Sold in the Cities of Guwahati and Shillong: Its Public Health Importance

ABSTRACT

The purpose of the present study was to determine the bacterial quality of pork as influenced by the place of collection for evaluating their hygienic standards from a public health point of view. The results of average total microbial load of pork samples revealed a higher range of total viable count (TVC) in Guwahati (0.19–112.5 × 10⁶/g) than that in Shillong (0.02–64.5 × 10⁶/g). Similar variations were reported earlier by Borah (1986) in pork samples collected from different sources. The average values of TVC recorded for both the regions also exceeded the standards (5 × 10⁶/g) as prescribed by the Bureau of Indian Standards (Anon, 1995) for raw goat meat, which rendered the meat under study unsafe and unhygienic for consumption from public health point of view.
