ABSTRACT

On the basis of the results, it could be concluded that pickled low-fat buffalo meat balls stored at ambient temperature had good acceptability during 90 days of storage period at ambient temperature, without any noticeable deterioration in physico-chemical, microbiological and sensory properties of the products.
