Microbiological Quality of Chevon Sold in Parbhani City

ABSTRACT

A study was conducted to assess the microbiological quality and prevalence of Escherichia coli, Staphylococcus aureus, and Salmonella spp. in goat carcasses slaughtered at retail shops of Parbhani city in Maharashtra. A total of 60 samples were collected from six different areas (A, B, C, D, E, and F) aseptically from thigh and neck regions of carcasses. The pH values of samples ranged from 6.10 ± 0.01 to 6.16 ± 0.02 and did not differ significantly. The moisture content ranged from 69.66 ± 0.81 to 79.66 ± 1.93 and varied significantly. Microbial counts also varied across areas. The highest microbial load was observed in retail meat shops from area D, while the highest coliform count was recorded in area A (83.33%). In other areas, it ranged from 16.66% to 33.33%. The Staphylococcus count was highest in areas A and B, with 100% prevalence in both, while it ranged from 16.66% to 33.33% in the remaining areas. Salmonella was not detected in any of the samples collected from Parbhani city.
