Prevalence of Food Borne Micro-organisms in Milk and Milk Products
Page No. : 75-77
ABSTRACT
A total of 78 bacterial isolates were recovered from 40 samples of milk, burfi, khoa, rasgulla and rasmalai, which included Staphylococcus aureus (27), S. albus (22), Bacillus cereus (12), E. coli (12), Klebsiella (3) and Proteus (2). S. aureus and S. albus were recovered from all the milk samples while E. coli and B. cereus were recovered from 60% and 40% of samples, respectively. Khoa and burfi were contaminated with Klebsiella and Proteus species, while S. aureus and B. cereus contaminated rasgulla and rasmalai. Mean bacterial count in milk, burfi, rasgulla, rasmalai and khoa were 4.8 x 106, 1.2 x 104, 5.2 x 103, 2.5 x 103 and 1.95 x 103, respectively. All the isolates of S. aureus, S. albus, E. coli, B. cereus were sensitive to gentamicin and ciprofloxacin and resistant to ampicillin and amoxicillin.Key words: Milk, Milk products, Food borne pathogens, Prevalence.
