Microbial Load on Pork and Chevon Samples Collected form Slaughter Units in Aizawl, Mizoram

ABSTRACT

Analysis of 50 each of pork and chevon samples collected from the animals slaughtered at Aizawl, Mizoram was carried for the microbial load (total viable count) and presence of Escherichia coli and Salmonella pathogens. The study revealed average total viable counts of 6.94± 0.18 and 6.52± 0.11 among the pork and chevon samples, respectively. E. coli could be isolated from 9 (18%) pork and 5 (10%) chevon samples, respectively. However, Salmonella pathogen could not be isolated from any of the samples.
