ABSTRACT
The present study was conducted to evaluate the bacteriological quality of milk and its products. A total of 95 bacterial isolates were recovered from 40 samples (10 each of milk, rasgulla, pera and burfi), which included Staphylococcus aureus (30), Bacillus cereus (27), Escherichia coli (20), Klebsiella (10) and Proteus (8). All the samples examined were contaminated with Staph aureus, B. cereus and E. coli. Rasgulla and burfi were contaminated with Proteus, while pera and burfi were contaminated with Klebsiella. The mean bacterial count in milk, rasgulla, pera and burfi were 5.8x105, 6.5x105, 3.5x105 and 4.5x105, respectively.Keywords: Bacteriological quality, milk, milk products.
