ABSTRACT
A total of 512 samples comprising buffalo meat (60), liver (50), heart (36), kidney (32), lymph nodes (200), butcher’s knife swabs (44), butcher’s hand swabs (53) and air samples from the environment of the slaughterhouses (37) were collected from Mathura, Agra and Aligarh slaughterhouses. The analysis of the 60 buffalo meat samples from Mathura, Agra and Aligarh slaughterhouses revealed the total viable counts in the range of 5.49-7.15 (6.16±0.59), 5.49-7.43 (6.31±0.68) and 5.49-7.34 (5.92±0.65) log10 cfu/g, respectively, and the coliform counts were in the range of 2.84-5.04 (4.22±0.63), 3.31-5.04 (4.48±0.51) and 2.84-5.04 (4.53±0.61) log10 cfu/g, respectively. The Salmonella counts (confirmed counts) of meat samples of Mathura, Agra and Aligarh slaughterhouses were found in the range 0.00-0.85 (0.04±0.18), 0.00-1.15 (0.06±0.26) and 0.00-0.00 (0.00±0.00) log10 cfu/g, respectively. A total of 154 pathogenic bacteria recovered from 512 samples were identified as E. coli (23), Salmonella spp. (4), Shigella dysenteriae (5), Klebsiella pneumoniae (11), Proteus ammoniae (17), Pseudomonas aeruginosa (13), Staphylococcus aureus (29), Streptococcus pyogenes (20), Corynebacterium pyogenes (8), Corynebacterium renale (3), Brucella abortus (6) and Bacillus cereus (15).Keywords: Buffalo meat, coliform, Salmonella, pathogenic bacteria, total viable count
