ABSTRACT
During the present study, a total of 60 samples (15 each of raw milk, burfi, pera and rasgulla) were collected from Aizawl and evaluated for bacteriological quality of raw milk and its products. Of the total samples examined, 130 bacterial isolates were recovered which includes Staphylococcus aureus (38), Escherichia coli (32), Bacillus cereus (30), Klebsiella spp. (16), Proteus spp. (9) and Pseudomonas spp. (5). All the samples examined were contaminated with S. aureus, E. coli, B. cereus. Raw milk, burfi and pera were contaminated with Klebsiella spp, while burfi and rasgulla were contaminated with Proteus spp. and Pseudomonas spp. The mean bacterial count in raw milk, burfi, pera and rasgulla were 6.8 x 106, 5.6 x 105, 4.4 x 105 and 6.6 x 105 cfu/ml or g respectively. The present findings revealed that most of the samples of raw milk and its products examined exceeded the permissible limits of different bacterial counts of pathogenic organisms, which makes the samples unfit for human consumption.Keywords: Bacteriological quality, raw milk, milk products
